It's difficult suggesting things for someone you don't know; but on Hilo, the "don't miss" is Volcanoes National Park, as part of a tour or by helicopter. On Maui, Haleakala Crater and the Maui Ocean Center are very popular. And Lahaina is great for just strolling around; touristy, but a lot of fun shops and restaurants right on the water.

then put in the island you want. There are also many tour operators on each island that cater to cruise ship passengers as well as island tourists...try a search on hawaii activities, through yahoo search. there are even many booths that sell a huge variety of tours on each island.. they get a small kickback for the bookings but sometimes have better prices than booking direct. Lahaina, Maui has many booths selling every tour you could think of right on the main tourist drag.
oh and one other thing don't go for the time-share discount from the booths, some offer heavy discounts, free tours, or even cash. It's not worth it and i doubt if your cruising you have the time. just ask for the lowest cash price available. I'm not entirely sure but i think one company that had many booths was called adventure warehouse...lots of tours to choose from and great prices.
