How many people sit at one table? Or does it vary from ship to ship?

It depends on where you are assigned in either main or late dining. Most cruise ships offer tables for 2, 4, 6, 8 and 10 (sometimes 12). You will be assigned to a table and you can check your table out after you board the cruise. If you want to change for any reason, the Maitre d' is always available so that you may do so. If you are traveling with other couples, be sure your travel agent advises the cruise line of their names and requests for you to share a dining table with them.

You can also make these changes when you board if you end up at different tables.

But it can be very difficult to get another table if you are with four or more persons.
We had the problem on the Splendour, and changing the table was only possible for 1 or two persons.
They gave our table, to a handicapd couple and we had to get another one.

But we were lucky and got a wonderful table with three very nice american people and enjoyed every dinner together with them.

Heph, to add to what has been said, tables for 2 are the least plentiful on most ships. Your travel agent should let the cruise line know when you book, whether you want early or late dining, what size table you prefer, if you want to sit with specific other people, if you have any special dietary needs, if you are celebrating a special occasion (birthday, anniversary, etc) and on what day you are celebrating, and if you have any specific requests as for as the table itself, such as a round table (as opposed to rectangtular) or a table near a window. The cruise line can't guarantee they can meet all your needs; for example, if you want a table for 2 near a window, they may not exist on the ship you're on. But you have a better shot at getting what you want if you request it in advance than if you don't.
