The ships dock away from the shore so you are at the mercy of the lines of people getting off the ship and the tenders as to how quick you can get ashore! We booked a private trip with Captain Buddy 2 years ago and had a great experience! His staff picked us up from the dock. He took us to Stingray City, 2 snorkeling sites and prepared us a delicious lunch.( all in a 1/2 day!) There were about 20 of us in our group. It was a great way to see the sites without the crowds.
You have to be tendered in from the cruise ship to the dock at Grand Cayman. The tender service there is known to be very slow. Be sure to allow plenty of time to return to the ship, or you could be left behind.
When we went to Grand Cayman we did the 830 am tour and had plenty of time. We walked straight there after the tender in. We had plenty of time getting back also. We even had time to eat lunch after and shop. It was an awesome experience. Have a good time.

I would book the later one, if you are booking through a private company (not through the ship), they give you tender tickets, which means you get off after the people who have booked their shore tours through the cruise line (at least with Carnival). Capt. Marvins has one at about 11:15, which will give you time to get off and time to get back on (with a little shopping in between!)
