An overview is about all you can get in that amount of time; but knowing that in advance, you will have a wonderful time.
Spend as much time as you can in Florence. Head straight there from the ship--try to beat the crowds to the Acadamia, the Duomo and the other major attractions. Allow maybe an hour for Pisa. That's enought to at least see the Leaning Tower and the Basillica.
Again, have a great time in Tuscany.

It is difficult, but I think you've got a great plan. If you just get a quick overview, then the next time you return, you'll know what you want to focus on. I like to do that with any place I've not visited. Find a driver, hit the hot spots, then the next time I return, I can spend time on things that have piqued my interest. Let us know how it went when you return.
