Virtually all major cruise lines now have the policy to automatically charge gratuities to your shipboard account, and almost all of them allow you to opt out of the automatic charge and pay cash.

Curious, another choice is that you can pre-pay your gratuities before you sail. If you do that, you receive vouchers your last day onboard the ship, which you put into the envelopes meant for tips.
When we were on sister ship Infinity earlier this year, passengers who wanted to charge gratuities to their onboard accounts (and who had not pre-paid) needed to go to the pursers desk about mid-way through the cruise to make arrangements. Details were provided in the daily program. Otherwise, it was cash only.
