Yes, juice and water, even sodas are okay to bring aboard. But beer and hard alcohol are no-nos. Wine is okay if you're willing to pay a $15 corkage fee per bottle.

No! According to your cruise documents, to bring wine aboard you have to pay a $15 corkage fee, otherwise they will confiscate it as you board the ship. That's all wine you bring aboard, including what you plan to drink in your cabin. They will give it back at the end of your cruise.
Do you have to pay the corkage fee? No. But if you plan on drinking the wine aboard the ship, you do.
How thorough a job is NCL at catching alcohol coming aboard? I would hazard to guess they catch 50% of all alcohol products.
Will you get lucky and get some wine or other alcohol products aboard without their knowledge? That depends on how good you are at smuggling.
