You'll find the Jewel most like the Dawn.
There will be some changes, but the ships are basically sisters to one another.

There are several reviews of Norwegian Jewel here. One of them is mine, so I am happy to answer any questions (based on my very short time onboard).

I believe a glass of wine runs around $4 to $5 per glass. It'll be cheaper to buy a bottle of wine at your first dinner, then have the waiter store what you don't drink the first night for you to drink the rest of the cruise. If you wish, you can take the unfinished bottle of wine back to yur cabin. Either way, you'll save more money by buying a bottle of wine at a time over buying by the glass.

From http://www.ncl.com/more/fp_mi_w2n.htm#06
With the exception of Alaska and Hawaii itineraries, NCL permits guests between the ages of eighteen (18) and twenty (20) to purchase and personally consume wine and beer while on NCL ships with the consent of a parent or legal guardian (“Parental Consent”). Complete details and the Parental Consent form are available on board at the Reception Desk.

Casino rules:
Admission
Guests must be at least 18 years of age in order to gamble in the casino. NCL does not condone underage gaming. Anyone that cannot provide proof of age on request will be politely asked to vacate the casino.

Shore Excursion rules:
Are there any restrictions?
An adult must accompany participants under the age of 18 on all tours. There is no charge for children under the age of two who do not occupy a separate seat. Some tours have additional restrictions implemented for your safety. These may include age, weight, height and/or medical history related restrictions.

I hope this helps!

Thanks Ron! Very helpful. My kids are in that funny age - dont want to hangout with teen but too young for adult. I think they'll be very happy with the casino and dancing as they are not drinkers. Going on the Jewel in July to Italy...our 2nd cruise. Thanks for the info
