We have been looking at NCL for Hawaii. We are not sure if we will like the freestyle dining traveling as a couple instead of a group. Will we have to eat alone? We enjoyed having a big table and meeting new people.

No, you won't have to eat alone, unless you would like to do so. With Freestyle Cruising you can request whatever table size you would like to have, whether it's a table for two, a table for eight or somethings in between. And if you would like to dine with friends, that's not a problem either.
